This All Inclusive dinner created by Michelin star Chef Michael Psilakis at Eos Restaurant will feature the Wines of the Wagner Family Caymus, Belle Glos and Mer Soleil.

Burrata with Pineapple and Watercress
Mer Soleil “Silver” Chardonnay, 2007-Combines ripe, intense peach, nectarine and tangerine fruit, with touches of floral and
spice. Gains body and depth, turning creamy in texture.
SECOND COURSE
Grilled Quail with Kumquats, Rosemary, and Mustard Greens
Belle Glos “Clark & Telephone Vineyard” Pinot Noir, 2007-Rich scarlet color, with aromas of brown spice, caramel and soft tea. The velvety palate offers flavors of bright red fruit, warm spices and sweet oak, supported by firm acidity and refined tannins.
THIRD COURSE
Cabernet braised Short Ribs with Sugar Snap Peas and Horseradish
Caymus, Napa Valley, Cabernet Sauvignon-2006-Powerful aromas of ripe blackberry and dark cherry, with notes of vanilla, cocoa and rose petal. In the mouth, the wine exudes richness and a finely-grained “cocoa” texture, with low
acidity expressing breadth and richness on the palate. Flavors of chocolate, dark berry fruits and the classic cabernet cassis are supported by the texture of fine-grained tannins.
FOURTH COURSE
Grilled Apricots with Candied Hazelnuts and Soft-Serve vanilla ice cream
Mer Soleil “Late Harvest” Viognier, 2004- Rich gold color. Beautiful, warm aromas of apricot nectar and honey are reflected in the flavors, with orange and citrus zest enriched by a balanced acidity.
